It is the day before Christmas, and all through our abode, we're getting ready for hosting tomorrow's family load!
Gingerbread is on the menu for the late afternoon grazing board, and to accompany tea, whiskey, affogato - gingerbread is anytime to be honest. And I've got the greatest Gingerbread recipe ever. It comes from my mum, and it's photocopied from another photocopy from an Aunty's old recipe book. So you can imagine it's hard to read and a little off centre, but you know it means it's going to be good!
Ingredients
• 60g butter
• 2/3 cup golden syrup
• 1 3/4 cup of plain flour
• 1 tsp bicarb soda
• 1/2 tsp ground ginger
• 1/2 tsp ground cardamon
• 1/2 tsp cinnamon
• 1/2 tsp ground cloves
• 1/2 tsp cacao
• 1 tbsp milk
• extra flour for dusting
Method
• melt butter over a low heat and add golden syrup, bring to the boil and then remove from the heat
• let is stand for 10 minutes
• meanwhile, sift the dry ingredients and add the milk
• then combine the butter mixture with a wooden spoon
• mix until smooth
• cover and leave it at room temp for 1.5 hours
• dust a surface with plain flour and knead lightly until it loses it's stickiness
• with a dusted rolling pin, roll it out to about 8mm thick and cut out shapes
• place on lined trays
• bake at 160 degrees for 8 to 10 minutes until golden brown
• don't move to cooling trays until the gingerbread is completely cooled
• decorate with icing and smarties
Icing Ingredients
• 250g pure icing sugar
• 1 egg white
• 1 tsp lemon juice
Icing Method
• put egg white in a bowl and beat lightly
• add sugar very gradually beating constantly with a spoon
• when thick and smooth (you might not have used all the sugar) add lemon juice and beat again
• add more of the sugar until thick and smooth (again, you might not have used all the sugar)
• decorate your gingerbread
